Applesauce Loaf
The plan for today was to make Whoopie Pies, but a lack of milk, which would have been needed for the batter but especially for the milk creme filling I was planning to make, meant that this was not going to happen. So instead I decided to use up the walnut halves I purchased by accident instead fo the smaller broken up pieces which I like to have in my müsli. The book called "Cakes" from Maida Heatter has a recipe for an Applesauce Loaf which sounded quick and easy, relatively healthy, used walnuts, and also had the advantage of using up applesauce I had lying around.
I made the recipe with only half the amount of raisins, and replaced the espresso powder with ~1 tbsp cocoa powder, because the espresso powder in our spice cabinet looked like it had to endure too much humidity.
Of course I could not wait to cut the loaf until it has cooled and rested in the fridge as the recipe suggests, but rather cut into it while it was still warm. It did not cut very well while warm, but cut beautifully the next day after storing at room temperature over night.
I do like the result - the raisins work really well in there, and the cinnamon, brown sugar, and whole wheat flour gives it a nice taste. The only things I would change if I make this again, would be to not use bread crumbs but rather flour to coat the loaf pan.
