 Banana Chocolate Chip Cookies

Usually ripe bananas disappear before I get my hands on them for baking, but this banana had been sitting on the counter for a couple of days and I really felt like making cookies. The result was a delicious, soft and almost healthy cookie with tons of banana flavor:

Banana Chocolate Chip Cookies


Ingredients:
  • 1 small very ripe banana
  • not quite 1/4 cup brown sugar
  • vanilla sugar
  • 1/4 cup soft butter
  • 3/4 cup flour
  • 1/4 cup oat mix (I used Organic Rolled Oats with Ancient Grains & Seeds from Trader Joe's)
  • dash of salt
  • dash of nutmeg
  • 1 tsp baking powder
  • 2/3 cup chocolate chips
Instructions:
Beat banana, soft butter and sugar until mixed well. Beat in salt, nutmeg, vanilla sugar and baking powder. Add flour and oat mix and combine. Stir in chocolate chips. I put this mixture in the freezer for 5 minutes, not sure this is necessary or made any difference. 
Preheat oven to 375 degrees, place dough rounds on baking sheet and flatten cookies with a wet palm. Bake for 12 minutes.

The cookies were almost too delicious. Will try even less sugar next time (the original recipe that I changed in multiple ways called for 3/4 cup sugar) - maybe 1/8 cup? Also try with half flour and half oat mix to give it a bit more texture.
