Banana Muffins
Another brown banana was lying on my counter for a couple of days now and it finally had to go, so I figured I'd try to make muffins with it.
The recipe I picked was super quick and easy to make without the need to use a mixer. I mixed the ingredients in about 5 minutes and baking time was only 15 minutes, so you can have warm muffins in less than half an hour. The chocolate chips make them sweet, so without them I would probably add more sugar or use soaked raisins instead.
- 1 medium very ripe banana
- 1 egg
- 1 tbsp melted butter
- 1 tbsp oil
- 1 tbsp greek yoghurt
- nutmeg, vanilla, salt
- 1.5 tbsp dark brown sugar
- 1/2 tsp baking powder & 1/4 tsp baking soda
- 3/4 cup flour (I used half whole wheat)
- 1/4 cup chocolate chips & almost 1/4/ cup walnut pieces
Instructions:
Preheat oven to 425 degrees, line 5 muffin tins. Mash banana, and add all liquid ingredients first, using a whisk. Then add all dry ingredients using wish and or spoon. Fill muffin forms and bake for 8 minutes, then reduce temperature to 350 degrees and bake another 8 minutes.
